Bisaap - hibiscus tea
Bisaap is the national drink of Senegal. It is made from the dried red flowers (in fact, calyces) from the roselle or hibiscus sabdariffa shrub. The flowers are boiled, and the resulting tea, sometimes mixed with fruit juice or mint, is chilled before serving. The drink has a sweet, tart flavour. It is known in large parts of Africa under different names: wonjo in Gambia, zobo in Nigeria, karkade in Egypt. In Senegal, you can find bisaap vendors – often young girls – in the street, at bus stations or larger public events. They sell the drink frozen or ice cold in little plastic bags.
For making your own bisaap, you need a small handful of dried flowers. First rinse the flowers in cold water. Heat a litre of water in a saucepan. When the water begins to boil, add the flowers, and boil a minute or two before removing from the heat. Sieve through a cloth or coffee filter. Add sugar according to taste. Serve hot or chilled.
